I'm working with a large WPF Project in a VM with 12 physical Cores. Visual Studio has 8, NCrunch 4 Cores configured.
I'm using Resharper and OZCode.
When I switch to the new Optimised-Mode, Visual Studio starts to stutter at nearly every action. I'm unable to continue work
because VS hangs for a few seconds on nearly every keystroke.

Can you confirm the setting you have for the 'Max number of processing threads' in your NCrunch configuration?
Can you also confirm the value of your 'Engine hosting strategy' inside NCrunch configuration?
If you try to do this with Task Manager enabled, does your CPU strike a ceiling at 100% for the duration of the stuttering? I'm wondering if this problem is due to CPU resources or if there is something else going on.
