I just installed the NCrunch_VS2019_3.26.0.1.msi and I think the feature ALT+U (open NCrunch menu) causes this issue.
Issue: the character u can not be inserted (so e.q it's not possible to type Func<T>) at least in .csproj files (I didn't tried any other project types).
If I remove 3.26.0.1 and install 3.25.0.3 the issue with the character is gone (but of course then NCrunch detects the wrong theme, at least the black theme can not be detected).
I also submitted a bug report from the NCrunch Menu.
This version has been created after I opened this ticket: https://forum.ncrunch.net/yaf_postsm13309_VS-2019-RTM---NCrunch---Test-Window-Settings-Window-not-taking-theme-into-account.aspx#post13309
Please have a look at it, its quite frustrating when you can not to insert an u. btw keep the u key pressed does work (but adds a lot of u characters).

Release notes for 3.26.0.2 since version v3.25.0.3
-----------------------------------------------------------------
Bound the new corner context menu to the colour scheme.
Changed the handling of our global hotkey ALT+U, it should be possible to use the U character once more.
Made the detection of Visual Studio colour theme changes more robust
Fixed an issue where the NCrunch console tool was trying to use versions of VS that were not installed.
We started showing the Status Icon before opening the first solution. This will improve the visibility of NCrunch under Visual Studio 2019.
Added an indicator at our top level menu that will show when NCrunch isn't loaded yet by Visual Studio 2019.
Added a hint to the shortcuts on the Status Icon Window
Added a global shortcut with the keys ALT+U to open the new corner context menu under Visual Studio 2019.

Thx again for the fast fix!
I can now insert u again (quite happy now ;)), the context menu as well as the test window/configuration window of ncrunch is collored correctly (depending on the theme).
